This Festive Drink – How to Make It

WThis is an easy version of a drink found on the seasonal menu. It's a party-sized pre-mixed which is packed with the essence of a Christmas time, which makes it perfect for your holiday party. Reserve the remaining cordial you can use for brunch beverages, sweets, or for additional servings of the drink.

Bikini Recipe

Makes enough for 10 people

Ingredients for the Clementine Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

To make the Premix (produces 850ml, enough for 10)

400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, to finish

Instructions

Making the Citrus Syrup: Put all the ingredients into a pan, heat until it reaches a simmer, agitating so the sugar melts. Next, turn off the heat allowing it to cool fully. Decant into a sterilised bottle, cap it and store in the refrigerator, it will last for up to four weeks.

For the Batch Mix: Combine all the liquid ingredients into one large bottle, leave to sit for 60 minutes, then strain best through cheesecloth, so it's fully clarified.

To serve: Pour 85ml of your batch mix into a cocktail shaker containing ice, and stir lightly for about 60 seconds to chill. Pour into a frosted cocktail glass or equivalent, top with some cranberries and complete it using a quick spritz of the essential oil above the glass.
